What we work on
Confident recommendations, not memorised scripts.
A good list still underperforms if the team cannot talk about it. We run practical, short training connected to your actual wines, so staff recommend with confidence and guests feel looked after rather than sold to.
The problem this addresses
Wine training often fails because it is generic. A long session on regions and grapes gives staff trivia, then a busy Friday arrives and they reach for the same bottle they always do.
What helps on the floor is smaller: a simple way to describe each featured wine, a sense of which dishes it suits, and the confidence to suggest a step up when it genuinely serves the guest.
Signs the team could use support
- Staff recommend the same few wines regardless of the dish.
- New team members take months to feel comfortable with the list.
- Guests ask a question and the answer is to read the list.
- Staff avoid suggesting a higher-priced wine for fear of seeming pushy.
- A new wine goes on the list and nobody has tasted it.
Questions we help answer
- Which wines should the team lead with, and why?
- How can each team member describe a wine in plain language?
- How do we suggest a step up without pressure?
- How do we bring new team members up to speed quickly?
- How do we keep knowledge fresh when the list changes?
What training can cover
- Tastings of the wines you actually sell.
- Simple, honest ways to describe each featured wine.
- Pairing cues connected to your menu.
- Recommending value and trading up without pressure.
- Short briefing notes the team can refer to on shift.
